Hanger Steak

 This cut is often called the Butcher’s Steak as it was the butcher's choice and they often kept for themselves.  

This cut from the diaphram, said to be hanging, very popular in French restaurants. 

A very flavorful cut, and we have a very hard time keeping this cut in stock as there is only one per cow.  This cut should be marinated and grilled to no more than medium rare.
