There are 8 primal cuts of meat on a carcass and infinite ways to cut them. We’ve worked with an artisanal butcher, one of the best in the country, to research the best ways to process our cattle. We are down to about 30 cuts and are thinking about what’s next all the time.
Each steak is unique and will weigh approximately the amount we have on the website but please expect slight variations. The butcher has the final say in how to best cut the beef. We weigh each steak and will charge you accordingly so the bill will reflect the actual weight plus shipping. We will always check with you to confirm dates for shipping.

Meats cuts are very regional and cultural. I can learn a lot about you from the requests of specific cuts. This is a particular satisfying part of the job and there is always something new to learn and love!
How Our Program Works
Portion weights are not exact, rather they are approximate sizes. Therefore, your invoice may vary from your order amount. Upon placing order, we chose your cut and weigh it prior to shipment. You will be charged the exact weight of the items shipped plus shipping charges.
We try to get as close to the weight listed on the product description as possible but this is an art and our artisan butcher cuts for quality.
All beef is delivered in labeled, hand-packed, vacuum packages. The beef is frozen, placed in recycled styrofoam coolers with a brochure from the ranch.
Normal Online Ordering - All cuts on the website are available for ordering at anytime.
Special cutting instructions for the butcher are possible, and depend upon availability of cut and timing of request. Let us know your needs and we can work with your for your custom cuts and delivery.
