Petitie Tender or Teres Major

Petite Tenders  or Teres Major are a well-kept secret among butchers. This muscle requires skilled craftsman to extract, but yields a wonderful dining experience and is a new leader in trendy white tablecloth restaurants.  Cut from the very tender shoulder clod, it is second only to the tenderloin for tenderness.    

Our petite tender comes in 2 versions - marinated with a popular deep, dark garlicky marinade or sold un-marinated.  This cut is a stand-out for your 4th of July Barbeque.  Simple grilling is all that required. and sliced thinly.  

Each tender weighs just under 1 pound.
