Round is a beef cut from the cow’s backside or rear. It is an extremely lean, flavorful meat. This is an extremely versatile cut used in carpaccio, sukiyaki, or more traditional -chicken-fried steaks, swiss steak, stir-fry.  Or simply - roast beef!
