Thompson River Ranch and the Ferry Plaza Wine Merchant of San Francisco have joined forces for a very special holiday offering - Wine and American-Wagyu pairings. 
Wagyu melts on your palate like the most sublime foie gras, leaving a satin finish on your tongue like a smooth-as-silk red wine. Thompson River Ranch Wagyu represents luxury dining at its finest.  What could be better than to have Debbie Zachareus, Sommelier at the Wine Merchant, pair this beautiful beef with her individual selections of red wine.

Month 1 of 3-month program

4 – TRR Wagyu 8 oz. Filet Mignon Steaks with Mushroom Truffle Oil Sauté

Wagyu filets are incredible tender and flavorful.  To add a supreme touch, we add TRR’s own Portobello Mushroom and Truffle Oil Sauce. 

2012 Farm Napa Valley Cabernet Sauvignon  

TASTING NOTES:  Leather saddle and peppery spice pop here, followed by dark raspberry fruit and black tea.  Dark red fruits and plum show through on the palate with balanced acidity and subtle, integrated tannins.

2011 Unti Syrah, Dry Creek Valley

This medium to full-bodied wine is a personal favorite because it strikes a great balance between Old and New World Syrah. The cool 2011 season resulted in a complex set of spicy and floral aromas, followed by sweet blueberry and blackberry flavors.  This well-balanced wine will make you think it was grown in a cooler climate than the Dry Creek Valley, which we think is, well, cool.  This euro-style (13.7% alcohol) Syrah is already drinking nicely and should continue to do so for 3 to 5 years.

TRR Braised Wagyu Short Ribs

This Wagyu meal is prepared in our commercial kitchen.  Short ribs are braised for hours in red wine, onions, and carrots.  These short ribs melt in your mouth.  Add your own wonderful potatoes and you have a spectacular feast.

2008 Medlock Ames Red Blend, Alexander Valley

Medlock Ames is a fine wine producer located in Alexander Valley in Sonoma County. Started in 1998 by friends Chris James and Ames Morison, this winery produces wines from 100% estate grown fruit.

2009 Robert Sinskey ‘POV’ Point of View Red, Napa Valley

The 2009 vintage of POV has elegant aromas and flavors of dark plum and cherry fruit backed by complex savory notes of olives, dried herbs and hints of earthy leaves of tobacco or tea. The tannins are firm yet supple, suggesting optimally ripened fruit that offer a nice weight on the mid palate, assuring this wine will be a crowd pleaser at the dinner table.

Month 3 of 3-month program 

4 - Award-winning Boneless 16 oz. Ribeye Steaks

These steaks are insanely marbled. We recently put our ribeyes in a renowned steak competition and won first place in every category, eight in total.  These steaks are dry-aged for 21 days and you won’t find a better steak, so it seems, in the land!

2010 Hourglass ‘Blueline Vineyard’ Merlot, Napa Valley

The magic of the vintage was the consistency of temperatures over the entire 2010-growing season. As the Blueline Estate resides in a slightly warmer corner of the Napa Valley, it had no problem achieving rich ripe flavors, yet the cooler days helped retain great natural acidity for very layered and complex flavors.  Balance is the single hardest thing to accomplish in farming world class wine, and 2010 was a vintage that provided ideal conditions.
