Strip Loins are beautifully marbled and extremely tender. Like the filet, it is taken from the middle of the cow’s back which produces the most tender cuts of beef on the entire cow. 

New Yorks tend to be one of the most popular steaks – best of both worlds taste and tenderness. They are best when cooked for a short time with dry heat methods such as grilling, broiling, pan-frying or sautéing.
