Very tender and flavorful cap, closest to the shortloin. This great steak comes in many names, great for grilling up quickly. 

 

Sirloin comes from the cow’s lower back, adjacent to the short loin. Sirloin is not quite as tender as short loin, but it is more flavorful. It responds very well to dry cooking methods such as sautéing, grilling, broiling and pan-frying.
