 The best way to describe this is a baby ribeye, this is the extension of the rib further up and a great price point for a lovely steak.  We keep it whole as it is much easier to grill but they make beautiful cut steaks as you slice them for serving.  

A very tender steak coming from the chuck, we cut the roast horizontally and pull out shortribs and the chuck-eye.  This cut is tender enough to grill vs. braising but we recommend a marinade. A great inexpensive steak.
