Beef Brisket - Competitor's Delight

The brisket cut is one of most popular cuts for barbecue competition. This is the cut to look for when you want to make corned beef. It is also quite popular as a braised/smoked/barbequed roast. Brisket comes in 2 sizes, assume about 25-30% shrink as you cook your brisket.
